A warming Organic gluten-free breakfast loaf to ease the morning blues this winter.

We have teamed up with Gemmah from @_naturally_peachy for this tasteful breakfast loaf. In a few simple steps, you can create a healthy, simple and delicious breakfast option that pairs perfectly with a soul-warming tea or coffee.

  • 2 cups gluten free self raising flour

  • 1 1/4 cups almond meal

  • 1/2 cup desiccated coconut

  • 1/2 cup flaked almonds

  • 2 tbsp chia seeds

  • 1/4 cup of craisins, dark choc chips, roasted macadamias, dates and sultanas

  • The rind and juice of one orange

  • 50g unsalted butter (melted)

  • 1 cup milk

  • 2 large eggs

  • 1 tbsp agave syrup (or golden syrup)

  • 1 medium granny smith apple

  • 1 tsp orange marmalade

  • 1/4 cup shaved coconut

1. Preheat the oven to 170 degrees Celsius. Combine the flour, almond meal, desiccated coconut, flaked almonds, chia seeds, craisins, choc chips, macadamias, dates, sultanas and orange rind in a large mixing bowl and give it a quick stir to ensure all are combined.

2. Make a well in the middle of the flour mix and slowly add in the wet ingredients (butter, milk, eggs, agave syrup and orange juice). Combine using a wooden spoon until a cake like batter is formed.

3. Line a loaf tin with a small amount of butter and some baking paper to ensure your loaf doesn’t stick. Cut the apple into thin slices (around 0.5cm). Spoon in 1/3 of the loaf mixture into the tin and spread evenly. Add one layer of apple slices on top and follow with the next 1/3 of the mixture. Again add another layer of apple and finish with the remaining loaf mixture.

4. Turn the oven temperature down to 160 degrees Celsius and bake for 45minutes. The loaf should be golden on top and super moist on the inside.

5. Allow the loaf to cool for 20 minutes. Brush with the marmalade and add a sprinkle of shaved coconut on top.

Enjoy toasted with some butter or if you’re feeling a little more adventurous try with a dollop of yoghurt and fresh berries for the ultimate breakfast.

Tip! Pre-soak your dates and sultanas in some warm water to soften them and ensure the loaf doesn’t dry out in the baking process.
